For example how many Elessium will I get from refining the gas or how much Ultarine is needed to make R-glass .

You can use the command AUTOFACTORY WHATMAKES RGLASS to learn the latter. That said, the result will depend on what station you are in. Here are some spreadsheets made some time ago if you're interested in diving deeper into it.

As for the relationship between raw and refined gasses, I cannot recall at the moment.

What happens to leftover gas when you refine it? Like if it take 5 raw to make one unit and you refine 8 what happens to the remaining 3?

Goes to the same place that every missing sock in the dryer goes, presumably. Either that or you just take a loss on refining.
